Basic Homemade Bread

It took me forever to get the courage to bake bread. It was a mythical beast that only the most accomplished bakers could tackle. Turns out it was easy as pie. Actually, it is way easier than pie.

This is the basic bread recipe I follow to get a perfect loaf every time but I can also jazz it up from time to time with seeds or some cinnamon. Or make buns instead of bread. It is intentionally vague to accommodate whatever I have on hand. As a sweetener I prefer honey but sometimes only have white sugar and on at least one occasion I only had brown sugar! I have used olive oil, coconut oil, vegetable oil….just anything I have on hand at the time. I have used up to half whole wheat flour, added flax meal, and topped off the flour with some coconut flour once.

Buddha Bowls

Everyone in my house is vegetarian (except the dog…). I’ve been a vegetarian for 25 years, my husband for about 20 years, and all 3 of our children have never eaten meat. Everday is meatless Monday around here!! Our go-to meal is a “Buddha Bowl”. I honestly don’t know if there is a “proper” way…
